What this protects — and what it doesn't

Your funding wallet has no direct on-chain link to the delivered sDAI, against a passive observer, within a small anonymity set. It is not anonymous and not seizure-proof: the amount can correlate deposit↔delivery, doing all steps in one session/network path can re-link you, and the operator — which posts the compliance root and sponsors your stealth key's gas — can time-correlate your funding wallet to the delivery key. Non-custodial: the operator never holds your funds.
